Ginger is widely used in Asian cooking. Ginger is one of 1400 species belonging to the zingiberaceae family (other members include turmeric and cardamon). Ginger is the most popular of the family. It is a rhizome although it is popularly referred to as 'root ginger'. More than just a spice and is widely used as a digestive aid The ginger root was originally seen as a digestive aid. Its active constituents are gingerols, zingiberene, and shogoals in the dried form-so dried ginger is much more pungent than the fresh root.
